Job Title: Cook

Reports to: Kitchen Manager

Job Overview

The role of a line cook is to prepare culinary delights for our guests in an efficient, timely fashion. The line cook is responsible for the daily preparation of food items in all areas of the kitchen, as well as cleaning and upkeep of the kitchen and its equipment. Reliability, efficiency, and commitment to quality are absolute musts. The Jaded Toad is a fast-paced work environment where we all jump in to help in whatever way is needed to support the team, the restaurant, and the customers; the mindset “that’s not my job” doesn’t exist here, and we wouldn’t have it any other way!

Job Qualifications

  • Previous prep or line cook experience
  • Food handlers certification
  • Alcohol handlers certification
  • Basic understanding of professional cooking and knife handling skills
  • Understanding and knowledge of safety, sanitation and food handling procedures

Duties and Responsibilities

  • Sets up station according to restaurant guidelines
  • Prepare all food items as directed in a sanitary and timely manner
  • Follow recipes, portion controls, and presentation specifications as set by the restaurant
  • Stock and maintain sufficient levels of food products at line stations to assure a smooth service period
  • Clean and maintain station while practicing exceptional safety, sanitation and organizational skills
  • Understand and demonstrate proper use and maintenance of all equipment in the station
  • Clean, sanitize, and organize the kitchen, walk-in coolers and all storage areas
  • Perform additional responsibilities as requested by the Chef, Sous Chef or Kitchen Manager at any time
  • Assume 100% responsibility for quality of products served
  • Know and comply consistently with our standard portion sizes, cooking methods, quality standards, kitchen rules, policies and procedures
  • Follow proper plate presentation and garnish set up for all dishes
  • Handle, store and rotate all products properly using F.I.F.O.
  • Complete required tasks within assigned time frames
  • Track and report any food waste
  • Assist in food prep assignments during off-peak periods as needed
  • Open and/or close the kitchen properly following the closing checklist for kitchen station
  • Cook only items generated from the restaurant point-of-sale system
  • Help wash dishes, prepare recycling, clean around restaurant and help with any other projects as assigned by the kitchen manager
  • If a meal is returned, correct the problem and report the return to the manager in a timely fashion
  • Maintain flexibility; be prepared to jump in and help with other duties as needed

Physical Requirements

  • Requires moderate physical effort: standing for long periods of time, carrying, bending, stretching, stooping, pulling and pushing
  • Lift weights up to 50 pounds
  • Ability to reach with hands and arms repeatedly

Working Conditions

  • Generally in an indoor setting
  • Varying schedule to include evenings and extended hours as business dictates; may be required to work additional hours as dictated by work load and staffing
  • Frequent exposure to heat/cold from mechanical equipment
